3 most delicious Biscotti Recipes

Apart from the traditional biscotti recipe, pastry-cooks from all over the world  constantly try to come up with some new, unusual and unique variations of the famous cookies. In this article we tried to select for you three of the most delicious ones. Here they are.

Biscotti with jam

What do you need?

1. 160g flour;

2. 120g. caster sugar;

3. 4 eggs;

4. 1 vanilla powder;

5. 2 tablespoons rum;

6. Apricot / strawberry (or whatever else you think would be appropriate) jam;

For the chocolate glaze:

1. 3 tablespoons cocoa;

2. 1 cup water (50ml);

3. 15g butter;

4. 3 tablespoons granulated sugar;


Beat the yolks and 80g of the granulated sugar. Then add the whites (again beaten), the rest of the sugar, the flour, the vanilla and the rum. Use a syringe to form your biscotti and sprinkle the granulates sugar all over them. Bake them for about 15 minutes. When they are ready, wait them to cool off; spread some jam on each side of each cookie and stick them in pairs.

For the Chocolate glaze: The cocoa, the rest of the granulated sugar and the water are mixed and cooked on the hot-plate. Then you add the butter and once again wait to cool off. When it is ready, the glaze is syringed over the biscotti.

Spring Biscotti

What do you need?

1. 2 cups flour;

2. 1-2 teaspoons baking powder;

3. ¼ cup butter;

4. ¾ cup sugar;

5. ¼ teaspoon salt;

6. 1 tablespoon orange zest;

7. 2 ounces chopped, white chocolate;

8. ½ teaspoon vanilla extract;

9. ½ cup dried cranberries;

10. 2 eggs;

11. 1 ¼ pistachio nuts;

12. 1 egg white;


Take some big, plastic container, mix and cream butter, orange zest and sugar until the whole mixture gets really light and fluffy. Then mix the eggs and the egg white and beat them. Combine flour and baking powder and a little pinch of salt and add them to the creamy mixture. Stir in the chocolate, the pistachios and the cranberries and leave the whole dough for about half an hour. While you’re waiting, preheat the oven to 160°-165°C. When the dough is ready, sprinkle some clean surface with some flour and turn it out on it. Then cut it into two equal halves and each of them form into a log which is approximately 12 inches long and 3 inches wide. Bake them for another 30 minutes (or until pale gold) and then cut each of the logs into slices. Arrange them on a baking sheet and leave them in the oven for 15 minutes. When they are ready, transfer them into another container and cool. Be aware that your biscotti have to be stored at room temperature.

Biscotti Toscani

What do you need?

1. 1/3 cup butter;

2.  ¾ cup sugar;

3. 2 eggs;

4. 2 1/3 cups flour;

5. 1-2 teaspoons baking powder;

6. 1 pinch salt;

7. 1/7 teaspoon ground nutmeg;

8. 1 teaspoon vanilla extract;

9. ¼ teaspoon almond extract;

10. 2 teaspoons orange zest;

11. ½ cup toasted almond pieces.


In a large container mix the sugar and the butter. Then add the vanilla and the almond extracts and the orange zest. Beat in the eggs. Then add the baking powder, the nutmeg, the flour and the salt and stir up. Add the almonds. Separate the dough into two identical parts and form them into loaves. Bake in the stove for about half an hour and then leave them to cool off. Cut them into slices and bake for another 10-15 minutes and when they are cooked, let them cool off once again. During that time, melt the chocolate and spread it on one side of each cookie.
